2010 Winning Brownie Recipes

First Place: Hawaiian Brownies

1/2 cup butter
1 12 oz. package chocolate chips
1 cup sugar (plus 1/2 cup)
1 1/3 cups flour
1 tsp. vanilla extract (plus 2 teaspoons)
1/2 tsp. baking powder
4 eggs (plus 1 egg)
1 8 oz. package cream cheese
1 cup shredded coconut
1 cup pecans or macadamia nuts
1 can pineapple tidbits

Preheat oven to 350 degrees F. Lightly grease bottom of 13x9 baking pan. Melt and stir butter and chocolate chips together. Add 1 cup sugar, flour, 1 tsp. vanilla, baking powder, 4 eggs and mix well.

In a separate bowl, mix cream cheese, coconut, 2 teaspoons vanilla, 1 egg, and 1/2 cup sugar.

Pour half of the chocolate batter into the pan. Sprinkle half the nuts and pineapple on top of batter. Dollop cream cheese mixture on top and spread it out evenly. Mix the rest of the nuts and pineapple into the remaining chocolate batter and pour over the top of the cream cheese mixture layer.

Bake about 40 minutes.


Second Place: Mocha Cinnamon Brownies


Nonstick vegetable spray
1/3 cup vegetable oil
2 tablespoons instant coffee
1 box brownie mix
1/3 cup water
2 large eggs
1 teaspoon cinnamon
1 cup milk chocolate pieces

2 tablespoons water
1 teaspoon cinnamon
1 teaspoon vanilla
2 teaspoons Dutch process cocoa
2 tablespoons melted butter
2 teaspoons instant coffee
2 cups confectioner's sugar


Preheat over to 350 degrees F.

Spray 13x9 baking pan.
Whisk water, oil, eggs, instant coffee, and cinnamon in large bowl.
Add brownie mix and blend.
Add milk chocolate pieces into batter.
Pour into baking pan.
Bake 35 to 40 minutes--until toothpick test comes out clean.
Cool completely.

Whisk together water, melted butter, cinnamon, instant coffee, vanilla, and Dutch process cocoa. Add confectioner's sugar and blend well. Spread glaze over brownies and refrigerate until set.

Cut and serve.


Third Place: Black Forest Brownies


1 15 oz. can black beans, rinsed and drained
3 eggs
1/2 stick of butter, melted
1 tablespoon vanilla
1 1/2 cup sugar
3 tablespoons flour
3/4 cup cocoa

Whipped cream
Cherry pie filling

Preheat oven to 350 degrees F. Blend beans and 1 egg in a food processor until smooth. Combine melted butter and bean mixture, along with 2 eggs and vanilla. Stir. Add sugar, flour and cocoa. Stir. Bake about 30 minutes. Top with whipped cream and pie filling.
